Cook Ahead | with a little help from my "Friends"

Ok, I am going to try to have great meals this weekend... the choices are chicken and beef.
I will attempt to prepare ahead of time for all my weekend meals..

FRIDAY – SATURDAY - SUNDAY
Friday Dinner w friends

Chicken and Beef Shish kabobs…w/onion,pepper,mushrooms
Wild rice
Desert: Vanilla Ice-cream w/splash of lemonchello
1 friend bring appetizers
1 friend brings salad

Chicken and Beef Shish kabobs…
2 Large onion - 2 Large Peppers (1 red 1 green) - 6  Large mushrooms
Cut chicken and beef pieces to your liking
Let marinade in your favorite dressing for 2 hrs.
Cut peppers, onion, and mushroom
Layer you skewer with chicken, onion, pepper, mushrooms… (3 pieces of meat each skewer)

IMPORTANT NOTE:
 Make an additional 2 skewers of beef and 2 skewers of chicken (put in fridge for later use)

Preheat grill to 400
Put ka-bobs away from flame
Cook 6 min on each side for med rare
Cook 4 min on each side for chicken (cooked thru)
